Cooking spray
2 ½ cups of powdered sugar
¾ cup unsweetened cocoa powder
¼ tsp kosher salt
4 cold large egg whites
½ tsp vanilla extract
1 cup milk chocolate chips
1 cup pecan pieces
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper and very lightly spray with cooking spray.
In a large bowl, combine powdered sugar, cocoa powder and salt.
In a separate bowl, separate egg whites and throw yolks away. Add vanilla extract to egg whites and then stir egg white mixture into dry ingredients.
Add chocolate chips and pecan pieces and mix well. Let rest for 20 minutes at room temperature.
Scoop tablespoon sized mounds on to the prepared baking sheet.
Bake until set for approximately 10 minutes. Let cool for about 5 minutes on baking sheet before transferring to a cooking rack to completely cool.
These cookies will have a chewy internal texture with a meringue like exterior texture.
