Blueberry Pie with Pecan Topping

To make the crust

1 ½ cups flour
1 ½ tsp white sugar
¾ tsp salt
½ cup oil
2 T milk

Mix all ingredients and form a ball.  Press lightly into pie pan and shape. If you press too hard and make shape solid, pie crust will be too dense and hard once cooked.

To make the filling

½ stick real butter, softened
1 cup white sugar
1 egg, well beaten
½ cup flour

Mix together and add 2 cups of fresh blueberries and pour over pie crust.

To make the Pecan Topping

3 T flour
3 T butter, partially softened
3 T chopped pecans

Combine the ingredients with a fork, mixing well. Sprinkle pecan mixture on top of the pie. Bake pie at 350º for 45 minutes - 1 hour. Pie crust and topping should be lightly browned and pie should be firm when shaken.
